One of my favorite things about our new home is the early morning farmers’ market on Saturday located at E Santa Clara Street. We have been picking up fresh lettuce, beets, and flowers for the coming week. They also have terrific pastries and fresh pressed juices available. This past Saturday we tried some fresh baba ghanoush with garbanzo chips, so good!

Day 1: South Llano River State Park – Junction, Texas : Offers swimming, tubing, hiking, and bird watching for those interested. We arrived and went for a quick dip in the river had some beers and relaxed. First day of vacation!

Day 2&3: Guadalupe Mountains National Park – Salt Flat, Texas : The closest gas station is 20 + miles away and they don’t have food/beer. Come prepared! Plan a whole day around hiking to the Top of Texas. We did the hike under 6 hours but it was still an all day hike. We made it back to the tent right before a big thunderstorm. Also, you must check out Devil’s Hall. It was beautiful and one of my favorite spots on the trip.

Day 4&5: Carlsbad Caverns National Park – Carlsbad, New Mexico : Carlsbad was just a stop on the way in my book but turned out to be way more exciting and beautiful than I had imagined. The self-guided tour was a little over an hour and went deeper into the cave than I ever expected. If you are in the area it is a must see for only $10.00.

Bottomless Lake State Park – Roswell, New Mexico : Roswell is absolutely amazing! I love all the themed shops and history the museum offered. We camped a few miles out at Bottomless Lake State Park. It was a quirky venue with an amazing swimming hole and excellent star gazing. We arrived to Roswell on Cinco De Mayo and found some terrific margaritas at Peppers off Main Street for anyone who is interested! The museum was more than expected and will have you believing.

Day 6: Inks Lake State Park – Burnet, Texas : Went for a quick run and jumped in at Devil’s Watering Hole. Had a quick swim before an intense thunderstorm trapped us in my car with an ice chest full of beer.IMG_0573On the Road: We didn’t spend too much time in the car with all the stops along the way.
